Yooji's relies on the innovative disinfection technology from Spectral Blue

The Yooji's Restaurant Group is one of the first Swiss companies to rely on Spectral Blue's innovative disinfection technology to safeguard its high hygiene standards in the production environment with the additional measure of blue light disinfection.

The sushi chain, which belongs to Two Spice AG, is known for offering delicious sushi creations and other specialties of Japanese cuisine at various locations in Switzerland. Yooji's stands for modern, healthy Japanese cuisine, sustainability and the highest standards of quality, freshness and hygiene.

The quality standards that the company transparently lives up to with its Yooji's Responsibility seal of approval do not stop at the selection of raw materials but also apply above all to the safety and hygiene standards at the production facility in Rümlang, Zurich.

“Too good to be true.” was the first comment after the presentation, “but we would like to test the technology” was the second comment.

Yooji's took a long time to validate the new technology, although the Multi-Wavelength, High-Intensity (MWHI) blue light disinfection devices were to be used as an additional safety feature. The Quality Management team wanted to ensure that the devices would work safely and effectively.

The Spectral Blue devices were installed in addition to the daylight in an area of the production facility and covered part of a packaging line. The powerful L200 devices were used, which achieve a high level of effectiveness with their intensity. The automation of the blue light disinfection using a timer enabled the disinfection cycles to be efficiently logged in the continuous hygiene monitoring system.

More than 600 samples were taken over 25 weeks and meticulously recorded. The result that the total number of aerobic mesophilic germs (AMK) continuously decreased and even had an effect on the adjacent part of the production plant, which was only indirectly illuminated, was impressive.

Spectral Blue is used to supplement existing hygiene processes. After conventional cleaning measures, the blue light safely removes all remaining microbial residues and biofilms and prevents their growth. The innovative technology disinfects work surfaces and air and also reaches small spaces that are difficult to clean using conventional methods.

Since the test, the devices have been permanently installed in one part of the production facility and as soon as the extensive conversions and renovations have been completed, the installation of Spectral Blue devices will be extended to ensure maximum hygiene in the new production section right from the start.
